Winter is in full swing, snow is falling across the country, and lamb seems like the perfect warming food to keep you fully satiated. Below, I’ll take you through how to make exceptional lamb chops with a rosemary and garlic marinade.
I use this marinade and recipe time and time again. The marinade will work for 8 lamb chops. I do admit, these lamb chops are exquisite on the barbecue so I did wind up braving the weather to grill these chops to perfection. But, you can make them from the comfort of your home by using your oven.

How to make the Marinade - with a HuBee Chopper!
The marinade is super simple, and can be put together in minutes! Even less if you use the HuBee garlic chopper. It consists of olive oil, rosemary, garlic, lemon zest, salt and pepper in a bowl. I usually chop everything together in the HuBee garlic chopper for maximum efficiency.
I peel the garlic and put sprigs freshly from the garden into my chopper, and spin a few times. Then, I add the zest, salt, oil, and pepper on top and spin it once more. This results in the perfect consistency to douse over your lamb chops. Try to prepare ahead of time--this recipe works best if you let your lamb marinade for 24hrs.
How Do You Cook Lamb Chops on the Grill?
You’ve come to the right place! With the two zone grilling method your lamb chops can be crispy on the outside and tender on the inside. To execute this method, you want to have the burners on one side of your gas powered grill on full blast and, on the other side, not lit at all. When your grill is closed, the heat from one side will transfer to the other like a convection oven. So, when you place meat on the unlit side it will cook without exposing it to direct flame. Fire up the grill and let it heat to at least 375 degrees. Once ready, place the lamb chops on the flaming portion of the grill for 2-3 minutes on each side--browning them to perfection. Then, transfer them to the unlit portion, close the grill, and let the lamb cook for 3-5 minutes for medium rare, and 5-8 minutes for well done. Let them cool, and enjoy!
How Do You Cook Lamb Chops in the Oven?
Don’t want to cook your lamb on the BBQ but still want your lamb chops to have that crisp outer layer and tender, juicy insides? Sear them and put them in the oven!
First, preheat the oven to 375 degrees. While the oven heats up, heat up some oil on a skillet or cast iron until it’s sizzling audibly. Sear each side of the lamb chops on the pan until they are brown, usually 2-3 minutes per side. Transfer them onto a baking dish (casserole dish), or, if you used a cast iron, keep them on that. Bake in the oven for 3-5 minutes for medium rare and 5-8 minutes for well done. It’s as simple as that!

Time: Marinade--5 minutes; Lamb Chops--15 minutes
Ingredients:
- 8 lamb chop
- ¼ cup olive oil
- 4 sprigs rosemary
- 8 cloves garlic
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 tablespoon lemon zest
Instructions:
- Mince the garlic and finely chop the rosemary. TIP: use the HuBee garlic chopper to save time!
- Combine all the ingredients in a mixing bowl(excluding the chops), mix thoroughly.
- In a bag or another container, dowse the lamb chops with the marinade. Let sit for at least an hour. Tastes best if marinated overnight.
- Cook the lamb chops in the oven or grill.
The Oven Method:
- Preheat the oven to 375 degrees.
- Sear the lamb chops until brown, 2-3 minutes each side.
- Put chops in an oven-safe dish and transfer into the oven.
- Cook about for 3-5 minutes for medium, 5-8 minutes for well done
On the Grill:
- Let the grill heat to 375 degrees, with a zone of flame and a zone without.
- Cook lamb on the flame until brown, about 2-3 minutes each side.
- Transfer lamb to unlit zone. Let cook for 3-5 minutes for medium, 5-8 for wel done.
